Impossibly Easy Sweet and Sour Chicken

I’m all about quick and easy, and last night’s chicken dinner fit the bill. Although my kids are all grown, I still appreciate not having to put a lot of time into cooking and dishes on weeknights, especially after a long work day. I popped this into the Instant Pot as soon as I got home from work, went upstairs to change and clean up a bit, and when I came back down, the pressure-cooking stage was finished and it was almost time to eat.

The magic came from this Goya Mojo Piña Marinade, with its sweet-and-sour pineapple flavor. Combined with cornstarch, it was thick and tasty and so good that I was eating it right out of the pot.

I brushed both sides of the chicken thighs with some marinade. I placed one cup of the marinade in the Instant Pot, and then placed the chicken on the trivet. Seven minutes at high pressure, with 10 minutes of natural pressure release, is plenty of cooking time for boneless thighs. We’re not even going to bother searing the thighs first, especially when there is no extra fat to caramelize the surface.

Once the pressure is released, remove the chicken from the pot and set aside. Take two tablespoons of cornstarch, and whisk with two tablespoons of ice cold water until smooth. Turn pot to “Sauté,” and wait until sauce begins to bubble. Whisk in the cornstarch mixture and stir just until it starts to thicken.

Turn off heat, pour sauce over chicken, and serve. Voilà, an easy, cheap dinner that you can serve over rice, covered with that thick, sweet-and-sour deliciousness.

  • 4 boneless, skinless chicken thighs
  • 1 cup Goya Mojo Piña Marinade, plus extra to brush on chicken
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water


  1. Place 1 cup of the Goya marinade into the Instant Pot.
  2. Place chicken on trivet inside of pot
  3. Set at high pressure for 7 minutes, with 10 minutes natural pressure release. Remove chicken from pot.
  4. Stir cornstarch into ice cold water. Set Instant Pot to “Sauté.” When it begins to bubble, whisk in cornstarch mixture. Stir until it begins to thicken, then remove from pot, pour over chicken, and serve.
