My favorite pressure cookers are the Kuhn-Rikon series, high-quality stovetop cookers with a heavy aluminum-clad bottom and whisper-quiet operation. These aren’t like your mom’s old cookers with the jiggly top and all the scary rattling and hissing sounds. I have the stockpot, which is perfect for, well, pretty much everything. I also have the braiser, which has a bumpy interior surface that is marvelous for browning foods. This is my go-to pan for chicken cacciatore. I also have the Fagor saucepan for smaller quantities of foods, like a veggie side dish.
